Fruit & Nut Compote In Ghee

Ingredients

  • 6 qty. each of dates, dried figs, dried apricots and dried prunes
  • 3 tbsp each of almonds, cashews, pistachios and dried coconut shavings
  • 2 tbsp raisins
  • 3 tbsp your choice of seeds (using hemp, pumpkin and sunflower in recipe)
  • Cinnamon Ghee (or your choice of plain or turmeric ghee) 3-4 tbsp
  • 20-30 strands of Saffron
  • 3/4 tsp dried ginger powder.

* you can use any nut, seed, dried fruit of your choice!

 

Chop all dried fruit and nuts. I chopped dried fruit on a board, and nuts in a chopper-blender. Let chopping be chunky.

Place frying pan on medium to low heat. Add Cinnamon ghee or any ghee of your choice. (Turmeric and plain ghee are equally good.)

Add 1 tbsp of ghee and fry roast all the dried fruits first, (roughly 3 minutes) and add 1/4th tsp ginger powder and 1/3 of saffron, towards the end, stir in for 5 -7 seconds and switch off the hob.

Repeat this for nuts separately as nuts will take a bit longer to roast (4-5 minutes). And again, repeat for the seeds and coconut shavings as these will fry roast quicker (2 minutes). Fry-roast nuts and seeds to crisper texture.

Mix all the batches together and allow to cool. Store in a mason jar at room temperature for up to 5-7 days,

Serve as a topping on your oats and cereals.

TIP: To get the goodness of Ghee and its infusion, try 2 tablespoons of this compote in a glass of hot milk or any non-dairy milk. Use as a topping on steamed apples.  Also munch on, for a sugar-free and gluten-free dessert craving!
